Roast Pork with Rocket, Pine Nut & Fetta Sturring

• Preheat oven to 230 degrees or 210 fan forced


• Combine breadcrumbs, rocket, pine nuts in a large bowl. Chop the reserved garlic from the jar of fetta. Add to the breadcrumbs, fetta, reserved fetta oil & egg. Mix well.


• Remove the pork from netting and lay on a clean board, skin side up. Use a sharp knife to score the skin. Turn pork over and pound to flatten. Arrange the stuffing over the middle of the pork. Fold the pork over the stuffing, and tie up with string.


• Drizzle with oil and rub salt over the skin. Place on a rack in the baking pan and bake for 30 mins, until cooked through. Cover loosely with foil.


• Rest for 15 mins before slicing. Serve with apple sauce and figs.
