Baked Ham with Plum Glaze |

• Combine jam, juice, sugar and mustard in a small saucepan. Simmer for 10mins, until glaze has thickened slightly. • Preheat oven to 160 degrees C or 140 degrees fan forced. Meanwhile cut rind from around the shank of the ham, 10cm from the knuckle. Remove the rind in 1 piece, starting at the base of the ham, leaving the fat behind. • Using a sharp knife, score the fat on the ham in a diamond pattern. Place the ham in a large baking pan, and spoon over half the glaze. Stud the diamonds on the ham surface with cloves and bake for 2 hrs, basting with glaze for 30mins.
• Meanwhile, heat honey and butter in a medium saucepan until simmering. Add whole plums and simmer on low heat for 8-10mins, until plums are tender. • Slice ham and serve with honeyed plums. |
